Happy Birthday America! Let’s celebrate with some cookies.

These Crumbl copycat cookies are chewy, buttery, and topped with a cream cheese icing just like the ones you get at the cute little pink store. Except unlike the store, these cookies won’t cost you $5 each ;)These soft and chewy bakery-style sugar cookies are topped with cream cheese frosting and festive sprinkles.

Let’s make some cookies!

Ingredients

Cookies

  • 1 cup salted butter, room temperature
  • 1 cup sugar
  • 2 eggs
  • 1 tsp butter vanilla extract
  • 2 tsp baking powder
  • 3 cups flour

Cream Cheese Frosting

  • 4 ounces cream cheese
  • 1/4 cup salted butter
  • 2.5 cups powdered sugar
  • 1/2 tsp butter vanilla extract
  • milk for thinning, if needed, depending on preference for texture

Instructions

  1. Preheat oven to 350 degrees. Cream butter and sugar together until light and fluffy.
  2. Add in eggs and extract to butter mixture, combine.
  3. Mix in baking powder, and add in flour 1 cup at a time until cookie dough is fully combined.
  4. Scoop dough and roll smooth. I use my #40 cookie scoop which makes about 1 ounce cookies each. Gently press the cookies into discs before baking. Do not make them too flat. (See picture!)

5. Bake cookies at 350 degrees for 7 minutes

6. Completely cool before frosting.

7. While cookies are cooling – cream together butter and cream cheese until combined. Add in extract and powdered sugar. If you prefer your frosting a little thinner, you can add a couple tablespoons of milk.

8. Frost cookies with cream cheese frosting using a piping bag, or simply spread the frosting on. Top with festive sprinkles. Enjoy!

Storing your cookies

You can store these cookies in an air-tight container at room temperature for 2-3 days. The cream cheese frosting has enough sugar in it to make the frosting shelf-stable. Or you can store in the refrigerator. I actually prefer these cookies chilled!

Recipe notes:

  • I use Lorann bakery emulsions. This butter vanilla emulsion gives the cookies a fresh bakery flavor that cannot be beat!
  • You may be tempted to stick these cookies back in the oven, but know they will bake a little bit longer as they cool on the baking sheet. I prefer my sugar cookies soft and chewy, and to achieve this texture make sure you pull your cookies out of the oven in time! I usually bake these cookies 7 minutes, and never more than 8 minutes.
