Cake Mix Cookie Bars – Easy Recipe!

Easy Cake Mix Cookie Bars

This recipe is so easy to customize to whatever you need. In this post, I’ve made a Valentine’s Day treat using Valentine’s day M&Ms, white chocolate chips, semi-sweet chocolate chips, and pink sprinkles. You could just as easily use only M&Ms, a few chocolate chips, or even enjoy these bars plain! The cake mix gives these bars a soft, chewy texture that is almost brownie-like. The texture of a brownie and the flavor of a cookie? That’s my kind of treat!
Ingredients
- Cake mix of choice – here I have used a yellow cake mix
- 1/2 cup of salted butter, melted
- 2 eggs
- 2 cups of mix-ins of choice (chocolate chips, M&Ms, etc) In this recipe I used 1/2 cup white chocolate chips, 1/2 cup semi-sweet chocolate chips, and 1 cup Valentines Day M&Ms.
Directions
- Preheat oven to 350 degrees. Lightly spray 9×13 in pan with cooking spray, or line with parchment paper.
- In a glass mixing bowl, melt 1/2 cup of butter in the microwave. You can also do this stovetop if you prefer.
- In bowl with melted butter, add in cake mix and eggs. Mix until combined. Fold in mix-ins.
- Pour and press batter into lightly greased baking dish. Bake for 15-18 minutes, or until center is no longer glossy and edges have started to turn lightly golden.
- Cool, and enjoy!
