Cake Mix Cookie Bars – Easy Recipe!

OK friends – I know we’re not always up for the kneading, rolling, cutting, and mixing. I feel you! I LOVE a quick, easy cheat recipe that comes together in a matter of minutes. Because at the end of the day I’m not just someone who loves to play around in the kitchen and make delicious recipes – I’m also a busy, working mama who sometimes just needs to be able to throw something together! Easy Cake Mix Cookie Bars

My favorite part about these cake mix cookie bars:

This recipe is so easy to customize to whatever you need. In this post, I’ve made a Valentine’s Day treat using Valentine’s day M&Ms, white chocolate chips, semi-sweet chocolate chips, and pink sprinkles. You could just as easily use only M&Ms, a few chocolate chips, or even enjoy these bars plain! The cake mix gives these bars a soft, chewy texture that is almost brownie-like. The texture of a brownie and the flavor of a cookie? That’s my kind of treat!

Ingredients

  • Cake mix of choice – here I have used a yellow cake mix
  • 1/2 cup of salted butter, melted
  • 2 eggs
  • 2 cups of mix-ins of choice (chocolate chips, M&Ms, etc) In this recipe I used 1/2 cup white chocolate chips, 1/2 cup semi-sweet chocolate chips, and 1 cup Valentines Day M&Ms.

Directions

  • Preheat oven to 350 degrees. Lightly spray 9×13 in pan with cooking spray, or line with parchment paper.
  • In a glass mixing bowl, melt 1/2 cup of butter in the microwave. You can also do this stovetop if you prefer.
  • In bowl with melted butter, add in cake mix and eggs. Mix until combined. Fold in mix-ins.
  • Pour and press batter into lightly greased baking dish. Bake for 15-18 minutes, or until center is no longer glossy and edges have started to turn lightly golden.
  • Cool, and enjoy!
