Ingredients

  • 3/4 cup salted butter, softened or room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 tsp red food dye
  • 1 tbsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup coco powder
  • 1 1/2 cup flour

For the Cream Cheese Frosting:

  • (1) 8oz block of cream cheese
  • 1/4 cup salted butter
  • 1 tsp vanilla
  • 4 cups powdered sugar

Instructions

  • Preheat oven to 350 degrees, grease an 8×8 baking dish or line with parchment paper
  • Cream together butter and sugar until light and fluffy
  • Add egg, red food dye, and vanilla
  • Combine dry ingredients in a separate bowl, then slowly add into the butter and sugar mixture, mixing until combined
  • Evenly spread cookie dough in baking dish
  • Bake in 350 degree oven for 18 minutes
  • Cool completely before frosting

For the Cream Cheese Frosting

  • Mix room temperature butter and cool cream cheese on high until combined and light and fluffy
  • Add in vanilla and powder sugar, 1 cup at a time, mixing until combine
  • Spread evenly on your cooled Red Velvet Cookie Bars. Top with festive Christmas sprinkles and enjoy!
