Red velvet is a classic dessert known for its red color and subtle cocoa flavor. Traditionally seen in cakes, the vibrant hue is what makes red velvet desserts so visually appealing. In cookie form, these bars offer a chewy texture that pairs perfectly with the creamy frosting.

Ingredients

  • 3/4 cup salted butter, softened or room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 tsp red food dye
  • 1 tbsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup coco powder
  • 1 1/2 cup flour

For the Cream Cheese Frosting:

  • (1) 8oz block of cream cheese
  • 1/4 cup salted butter
  • 1 tsp vanilla
  • 4 cups powdered sugar

Instructions

  • Preheat oven to 350 degrees, grease an 8×8 baking dish or line with parchment paper
  • Cream together butter and sugar until light and fluffy
  • Add egg, red food dye, and vanilla
  • Combine dry ingredients in a separate bowl, then slowly add into the butter and sugar mixture, mixing until combined
  • Evenly spread cookie dough in baking dish
  • Bake in 350 degree oven for 18 minutes
  • Cool completely before frosting

For the Cream Cheese Frosting

  • Mix room temperature butter and cool cream cheese on high until combined and light and fluffy
  • Add in vanilla and powder sugar, 1 cup at a time, mixing until combine
  • Spread evenly on your cooled Red Velvet Cookie Bars. Top with festive Christmas sprinkles and enjoy!
