If you’re a fan of easy sweets and nutritious treats this recipe is for you!

If your family is anything like mine, one week your kids LOVE apples, and the next week they go on an apple strike (same with bananas!). Some weeks we end up with odd and end produce that doesn’t get eaten before it gets past its prime. This recipe is a great way to use up those apples that are getting close to their expiration date. I love finding creative ways to reduce waste in my kitchen – groceries are expensive after all!

These apples have quickly become a regular part of our food prep for the week. I really like having a big batch in the fridge for the kids to heat up for after school snacks or to complement breakfast. Let’s get to it!

Ingredients:

-3 apples, I use what I have on hand. But for a more complex flavor profile, use a variety of apple types

-2 tsp cinnamon

-1/2 tsp nutmeg

-1/4 cup maple syrup

Instructions:

  1. Wash and slice apples
  2. Place apples in stovetop pan with 2 tbsp of water, sprinkle cinnamon and nutmeg on top. Simmer on low-medium heat for approximately 15 minutes. Stir occasionally.
  3. Add in maple syrup, simmer an additional 5 minutes.
  4. Remove from heat. Top with vanilla ice cream if you’re feeling feisty! Enjoy!
