Rice Krispie treats were a childhood staple for me, and I love that this recipe combines the crispy marshmallow goodness of the classic treat with the soft, chewy texture of a cookie.
This recipe takes a basic brown sugar cookie base from my pie-inspired cookies (like this Key Lime Pie Cookie & this Peanut Butter Pie Cookie) and adds in rice krispie cereal instead of the vanilla wafers. No need to fix something that isn’t broken, and this cookie base is solid! Then the cookie is formed around a large marshmallow and rolled in more rice krispies. I made these for my family and everyone loved them!
