Rice Krispie treats were a childhood staple for me, and I love that this recipe combines the crispy marshmallow goodness of the classic treat with the soft, chewy texture of a cookie.

This recipe takes a basic brown sugar cookie base from my pie-inspired cookies (like this Key Lime Pie Cookie & this Peanut Butter Pie Cookie) and adds in rice krispie cereal instead of the vanilla wafers. No need to fix something that isn’t broken, and this cookie base is solid! Then the cookie is formed around a large marshmallow and rolled in more rice krispies. I made these for my family and everyone loved them!

Let’s get to baking this marshmallow goodness.

Ingredients

  • 1 cup salted butter, room termperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2.5 cups all purpose flour
  • 2 cups Rice Krispie cereal, plus extra to roll dough balls in
  • Large marshmallows

Instructions

  • Preheat oven to 350 degrees
  • Cream together butter and sugars until light and fluffy
  • Next, add in your eggs and vanilla and mix until combined
  • In a separate bowl, mix together your flour, baking soda, and baking powder, and mix into your dough mixture until just combined
  • Fold in 2 cups of Rice Krispie cereal
  • Your dough should look a little something like this:
  • Scoop out 3 ounces of cookie dough, or if you’re using a medium sized cookie scoop, scoop 2 scoops of dough. Roll dough together into single dough ball. Press dough ball into disc and then form each dough disc around a large marshmallow

  • Roll covered marshmallow in additional Rice Krispies.
  • Bake cookies at 350 degrees for 10-11 minutes.
  • Remove from oven, cool, enjoy!
