There’s something comforting about a warm, freshly baked chocolate chip cookie. But what if you’re craving just one cookie and don’t want to commit to an entire batch? I feel you sister! This is me, basically every day – ha! Enter the single-serve chocolate chip cookie — your new best friend for a quick, satisfying dessert without any leftovers! And no babysitting the oven while you make three sheets of cookies. Its a win-win!

Why Go for a Single-Serve Chocolate Chip Cookies?

We’ve all been there. You get a sudden craving for a cookie, but the thought of baking an entire batch just to satisfy that craving seems excessive. And let’s be honest, while it’s great to have a stash of cookies, it’s hard to stop at just one when there’s a whole jar full of them staring at you! I LOVE knowing that I can whip up a single cookie when the craving strikes! Also – nothing fancy here. These cookies are basic and take 5 minutes to whip up!

WARNING

The title is a tad misleading. This recipe actually makes two large chocolate chip cookies – so don’t say I didn’t warn you! This is actually a win in my book, this recipe is perfect for stay-at-home date night, or cut them in half for a small family treat after dinner. Because while the small batch is great – who actually only eats one chocolate chip cookie? 😉

Recipe Notes

  • This recipe makes two large chocolate chip cookies. These cookies are going to taste a little different from my Classic Chocolate Chip Cookies. Because while the main ingredients are the same, the ratios are of course a little different due to everything being reduced. There’s really no way to use 1/2 of an egg, so the extra fat:flour ratio that the whole egg yolk provides creates a deliciously chewy and dense cookie. Yum!
  • I’ve used semi-sweet chocolate chips in this recipe, which in my opinion is the only way to make a chocolate chip cookie. (Don’t come for me – I feel strongly about this). But certainly if you prefer milk chocolate or dark chocolate – go for it sister! There are no rules to this, so you make what you love!
  • I top these cookies with flaky sea salt, which I think really brings out the sweet flavors in the cookie and balance them so nicely. If you don’t love an extra sweet and salty juxtaposition then you can certainly omit the salty topping.

Let’s get to baking these Single Serve Chocolate Chip Cookies!

Ingredients

  • 3 Tbsp salted butter, melted
  • 3 Tbsp brown sugar
  • 3 Tbsp granulated sugar
  • 1 egg yolk
  • 1/4 tsp vanilla extract
  • 1/2 Cup all purpose flour
  • 1/4 Tsp baking soda
  • A pinch of salt
  • 1/4 Cup semi-sweet chocolate chips
  • Flaky sea salt for topping (optional)

Directions

  1. Preheat oven to 350 degrees.
  2. Melt butter in microwave safe bowl. Use a bowl large enough to fit all ingredients so you can use the same bowl for the remainder of the recipe. Remember – it’s a small batch!
  3. Once butter is melted, add in sugars, egg yolk, and vanilla extract. Mix until combined.
  4. Add in dry ingredients and mix until just combined.
  5. Fold in chocolate chips
  6. Divide dough into 2 equal portions. Roll portions into balls and place on cookie sheet. Top dough balls with extra chocolate chips.
  7. Bake cookies at 350 degrees for 10 minutes. Cookies should still look gooey in the middle but edges should be set when they’re pulled from the oven.
  8. Allow cookies to cool for a few minutes, top with sea salt, and enjoy!
