If you love s’mores, then these s’mores cookie bars are about to become your new go-to treat. They’ve got everything you want in a s’more—melty chocolate, gooey marshmallows, and that sweet graham cracker flavor—all baked into soft, chewy cookie bars. No campfire required, no sticky fingers, just pure deliciousness.

What Are S’mores Cookie Bars?

Think: a chocolate chip cookie meets a s’more, baked in a pan, and ready to slice up and share. The base is a graham cracker-y cookie dough topped with marshmallow fluff and chocolate. S’mores cookie bars are basically fall bonfire nostalgia in bar form. Even better – this is an easy recipe!

Smores Cookie Bars – Perfect for Fall Baking

I know a lot of people consider s’mores a summer treat, and I can only imagine that those same people don’t live in the South – ha! I classify s’mores under Fall baking all day, every day (because we aren’t making bonfires in the summer in Memphis).

Let’s Talk About the Base Dough

The cookie dough in these s’mores cookie bars is next level. It’s kind of like a classic chocolate chip cookie base, but with a twist—graham cracker crumbs mixed right in. That gives it that subtle, toasty, honey graham flavor!

It’s soft, buttery, and just the right amount of chewy. And honestly? You could stop at just the dough and be happy. But of course we’re going to add marshmallow fluff and Hershey’s bars.

Ingredients

  • 1 cup salted butter
  • 1 cup brown sugar
  • 1 egg, plus 1 yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 sleeve graham crackers, crushed
  • 2 cups all purpose flour
  • 1 cup marshmallow fluff
  • 2 Hershey’s bars (or substitute with other milk chocolate bar)

Directions

  • Preheat Oven to 350 degrees Fahrenheit & line an 8×8 baking dish with parchment paper or lightly grease pan.
  • Cream together butter and brown sugar, add eggs and vanilla, mix until combined.
  • In a separate bowl, combine AP flour, salt, and baking soda. Mix dry ingredients, then add dry ingredients into the butter/sugar mixture until just combined.
  • Fold crushed graham crackers into cookie dough. Gently fold until graham crackers are evenly dispersed through the dough.
  • Press about 2/3 of the dough into 8×8 baking dish lined with parchment paper, set the rest aside, we’ll use it in just a minute!

  • Layer 1 cup of marshmallow fluff onto pressed cookie dough. Spread evenly over cookie dough.
  • Chop your milk chocolate or break apart your Hershey’s bars into the smaller pieces. Evenly spread the chocolate on top of the marshmallow fluff, reserving a few pieces to top the cookie bars with.

  • By now you should have a layer of cookie dough, marshmallow fluff, and chocolate chunks in your pan. Now, using the rest of the cookie dough we set aside earlier, drop dallops of dough evenly over cookie bars. Use the rest of the cookie dough for this purpose.

  • Bake cookie bars at 350 degrees for 15-17 minutes. Cookie dough on top should be slightly golden and should have lost most of its glossy shine on top.
  • After removing the cookie bars from the oven, top the bars with a few extra pieces of chocolate. Allow cookie bars to cool before slicing and serving. Enjoy!
