Ingredients

  • 1 cup of butter, browned
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg, + 1 egg yolk
  • 1/2 cup molasses
  • 2 tsp cinnamon
  • 2 tsp ginger
  • 1/2 tsp cloves
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 2 cups + 2 tbsp flour
  • 1/2 cup granulated sugar for rolling cookies

Directions

  1. Brown your butter. You can see detailed instructions in my recipe for brown butter & maple pumpkin cookies.
  2. Allow your butter to cool for about 30 minutes. Preheat oven to 350.
  3. In a mixing bowl, add your brown butter with your sugars, mix until combined.
  4. Add your egg and molasses
  5. In a separate bowl, mix your dry ingredients. Slowly add your dry ingredients into your butter mixture. Mix until just combined.
  6. Scoop cookies and roll in granulated sugar before placing on baking sheet.
  7. Bake cookies for 8 minutes. Cookies will be soft and gooey when you take them out – allow them to set on your baking sheet for 10-15 minutes.
  8. Transfer cookies to parchment paper or a cooling rack to cool completely. Enjoy!
