Melt butter in microwave-safe bowl. Mix cake mix and eggs into melted butter. Mix until combined.
Fold in white chocolate chips
Scoop cookie dough onto baking sheets, I use a 1.5 tablespoon scoop, or a #40 scoop.
Bake for 8-10 minutes
When you take your cookies out of the oven, top each cookie with a few extra white chocolate chips. Be careful – cookies will be hot! The reason we do this after baking? If you top them with extra white chocolate chips before baking, the chocolate chips on top will brown a little. I prefer to keep them nice and bright white!
