Strawberry Sugar Cookie Bars

If you’re a fan of sugar cookies, then you’re going to fall head over heels for these Strawberry Sugar Cookie Bars. They’re everything you love about sugar cookies—soft, chewy, and buttery—but with a fresh, fruity twist that takes them to the next level. And even better – no kneading, rolling, or cutting involved! This is the perfect treat for a crowd, and a simple dessert to throw together for any celebration!

Why Sugar Cookie Bars?

  • These are the perfect lazy girl dessert- you don’t have to worry about rolling and cutting cookie dough, and don’t have to worry about shapes spreading in the oven (You don’t have to worry about that part anyway with my Perfect Sugar Cookie Cutout recipe 😉 )
  • These bars are easily customizable for various events or celebrations. Baby showers, Valentine’s Day, Easter, Birthdays… the possibilities are endless!
  • These bars are perfectly sweet, chewy, soft, and full of delicious strawberry flavor thanks to the Lorann Strawberry baking flavor. If you don’t have this particular flavor on hand you can use another Strawberry extract or flavor from your local grocery store. This is the same flavor used in my Strawberry Sugar Cookie recipe.

Ingredients

Strawberry Sugar Cookie Bars

  • 1.5 cups butter (salted or unsalted is fine), room temperature
  • 1.5 cups granulated sugar
  • 2 eggs
  • 1 tbsp Lorann Strawberry flavor (or other strawberry flavor/extract of your choice)
  • 4-5 drops of pink food dye
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3.5 cup all purpose flour

Cream Cheese Frosting

  • 8oz block cream cheese
  • 1/4 cup softened butter, room temperature
  • 1 tsp vanilla extract
  • 4 cups powdered sugar

Directions

  1. Preheat oven to 350 degrees, line a 9×13 pan with parchment paper or spray with nonstick spray.
  2. With an electric mixer, cream together butter and sugar until light and fluffy. Add eggs, strawberry flavor, and pink food dye. Mix until combined.
  3. In a separate bowl, mix together dry ingredients. Add dry ingredients into wet ingredients, mix until combined.
  4. Evenly press dough into line 9 x 13 pan. Bake at 350 degrees for 16-20 minutes. When checking cookie bars, you want to take them out when they have lost their gloss on the top and the edges are just starting to firm up and turn lightly golden. Do not overbake! Pulling them out as soon as their puffy and not glossy will assure that your cookies are soft and chewy.
  5. Allow strawberry sugar cookie bars to completely cool before frosting.

For the cream cheese frosting:

  • Mix room temperature butter and cool cream cheese on high until combined and light and fluffy
  • Add in vanilla and powder sugar, 1 cup at a time, mixing until combined.
  • Spread evenly on your cooled Strawberry sugar cookie bars. Top with festive sprinkles and enjoy!
